He left the hotel in 1993 to work for Albert Roux at the Michelin-starred Le Gavroche, where he first met Gordon Ramsay.There were subsequent stains at Gravetye Manor in Sussex, Amsterdam, and other restaurants in New York City.Wareing joined Gordon Ramsay’s Aubergine when it opened in 1993. There, he worked as sous chef under Head Chef Ramsay. Over the next 15 years, Wareing worked with Ramsay, and he was referred to as Ramsay’s protégé.Wareing was named Young Chef of the Year by the Restaurant Association in 1995 while working at Aubergine.
Later, he would say that Ramsay taught him how to cook, calling it “the most important time in my life.”In 1995, he took a year off from Aubergine to work with Daniel Boulud in the United States and Guy Savoy in France.His first job as head chef upon his return to the UK was at the brand-new restaurant L’Oranger, which was owned by A-Z Restaurants, the same company that also owned Aubergine and had stakes held by Wareing and Ramsay.While working as head chef at L’Oranger, he received his first Michelin star at the age of 25.He offered Angela Hartnett her first restaurant job.

In 2003, Wareing became Chef Patron of the Grill Room at the Savoy Hotel and was named Chef of the Year by Caterer and Hotelkeeper’s Catey Awards. The restaurant replaced Pierre Koffmann’s La Tante Claire at the Berkeley Hotel.He was up against Anton Edelmann, his former boss from the River Room at the Savoy, when he returned there.Wareing decided to keep serving the British fare that the Grill Room was known for, including his version of items like potted shrimps and steak and kidney pudding that were previously on the menu. This was in contrast to Pétrus’ French fare.The Savoy Grill received its first Michelin star in the hotel’s history in 2004, while Pétrus went on to receive two Michelin stars and five AA Rosettes.
Wareing also transformed the previous Pétrus location into La Fleur and opened Banquette, an American-style diner at The Savoy.In 2004, he won the title of Restaurateur of the Year at the Tatler Restaurant Awards.
