Adam Jackson was the chef when The Black Swan’s restaurant first received a Michelin star in 2012. Jackson left The Black Swan in June 2013 to open his own restaurant, and Banks replaced him as the restaurant’s head chef. When the restaurant kept its Michelin Star that year, Banks, then 24 years old, became the youngest chef to do so.

In a field next to the restaurant, the family created a three-acre kitchen garden in 2013. With the garden, the Banks were able to grow food that was exclusively theirs and serve ingredients that were unavailable elsewhere, like Crapaudine beetroot, Black Truffe potatoes, and Wineberries.
