After earning her Ph.D. in 2012, Khan began hosting private supper clubs in her home for a dozen people at a cost of £35 per person. In 2017, Khan opened Darjeeling Express in Soho, a 56-seat restaurant serving Bengali and Indian Rajput cuisine. The restaurant is named after a train that she rode as a child during summer vacations.
Her team was made up of Asian immigrant women who all worked full-time and had no professional training; They worked for Khan on days off, but they were able to reduce the hours they worked at their other jobs and eventually quit them altogether.
