Oso was the first restaurant in Matthew’s hospitality empire, founded in 2015 with business partner Nodar Mosiashvili and Chef Cassandra Rhodes. It is a Mexican street food restaurant that quickly gained popularity, prompting Matt to open Lucille’s, a cocktail bar and event space in the neighborhood, in 2019. Later on, he expanded the business by opening Pizza By Lucille’s, a take-out pizza joint right next door. The name “Lucille” is a tribute to Matt’s grandmother, who is also the mother of his father, Alex Trebek. Before launching the company, Matthew and his partners traveled to Mexico City to learn how to make local delicacies such as homemade tortillas, tacos, and fruit salads.
Trebek’s interest in the hospitality industry grew during his time in college and after school when he was a part-time bartender. Every Wednesday, this weekly meal is held at St. Matthew’s Baptist Church. The meal location is designed to look like a restaurant dining room, with large tables dressed with tablecloths, silverware, and chairs donated by the church’s congregation. Volunteers serve the guests, which eliminates the need for buffet lines. Chefs Cassandra Rhoades and Nicholas Cerda are in charge of preparing Lucille’s Family Meal food, and the entire team is a part of the overall meal experience.
