When Roux was 16 years old and had finished high school, he began an apprenticeship in Paris under Master Patissier Hellegouarche. He assisted his father and uncle as a commis de cuisine at Le Gavroche from the summer of 1979 until January of 1980. After that, he worked for Alain Chapel’s hotel and restaurant in Mionnay, in the Rhône-Alpes region close to Lyon, for two years as a commis de cuisine trainee.
He underwent basic training with the French Army before serving his military service at the Élysée Palace under Presidents François Mitterrand and Valéry Giscard d’Estaing from February 1982 to March 1983. After completing his military service, Roux spent the next four months working in Paris, spending the first two months at the Boucherie Lamartine on the Avenue Victor-Hugo and the following two months at the Charcuterie Gérard Mothu in St-Mandé.

Roux has appeared on a number of television shows, including his friend Gordon Ramsay’s Hell’s Kitchen on ITV and as a judge on MasterChef: The Professionals on BBC Two. On Masterchef South Africa in 2012, he made an appearance as a guest judge. Roux and Kate Goodman co-hosted BBC Two’s Food and Drink from 2013 to 2014. He made an appearance in the 2013 season of The Chef’s Protege as one of the mentors.

Roux announced in March 2014 that he was leaving the BBC due to a disagreement regarding his role as brand ambassador for Albert Bartlett Rooster potatoes. First Class Chefs for the Disney Channel and Kitchen Impossible with Michel Roux Jr. for Channel 4 were among Roux’s 2015 television appearances after a hiatus. After James Martin left the BBC’s Saturday Kitchen after ten years, Roux took over as host in April 2016. Roux disqualified himself from working as a host full-time.
