Paul Hollywood White Bread
500g/1lb 2oz strong white flour, plus extra for kneading
1 x 7g sachet of instant yeast
320ml/11½oz cold water
40ml/1½fl oz olive oil, plus extra for kneading
extra oil and flour, for kneading
- Make sure the salt and yeast don’t touch as you combine the dry ingredients in a bowl. Add 240ml/9fl oz of water along with the oil.
- Combine the ingredients with your hands. Add the remaining water, a little at a time (you might not need it all), until the flour has all left the bowl’s edge and the mixture is soft and crumbly.
- A little oil should be applied to a tidy work surface. Start kneading the dough after setting it on the oil. Repeat this process for 5 to 10 minutes, or until the dough is silky and smooth. When the dough reaches the desired consistency, put it in a fresh, oiled bowl. Cling film the container and keep it warm until the plant has tripled in size.
- Place the dough onto a floured surface after it has risen. Fold the dough repeatedly in on itself to knock it back. Continue doing this until the dough is smooth and all the air has been removed.
- Flatten the dough into a rectangle and shape into a bloomer. You fold each end into the center while keeping the long side facing up, then roll up like a Swiss roll to create a smooth top with a seam along the base. Roll very gently with your hands’ heels.
- Place on a parchment-lined tray, cover, and allow to prove for a minimum of one and a half hours at room temperature, or until doubled in size.
- Sprinkle with a little flour and lightly mist with water. Use a sharp knife to make four diagonal cuts across the top.
- Set a baking tray filled with water on the bottom shelf of the oven and preheat to 220/425F/Gas 7. This will generate steam while the loaf bakes. The loaf should bake for 25 minutes on the middle shelf. Following this, reduce the heat to 200C/400F/Gas 6 and continue baking for an additional 10 minutes. Take out of the oven, then let cool on a wire rack.
